4 medium sized sweet potatoes
1/2 tbsp olive oil or olive oil spray
1 tsp salt
Method
- Preheat your oven to 425F. Line a baking tray with parchment paper or foil.
- Wash and dry the sweet potatoes.Slice each sweet potato in half lengthwise.
- Brush the cut side of the sweet potato with olive oil, or spray the baking tray well with olive oil. Place the sweet potatoes cut side down on the baking tray.
- Bake for 35-45 minutes until the potatoes are soft when you poke them with a fork.
- Remove tray from oven and use tongs to flip the sweet potatoes over, then sprinkle well with salt. Enjoy!
