Ingredients
1/2 cup natural creamy almond butter
1/4 cup melted unrefined coconut oil
1 large egg
1/2 cup real maple syrup
1/4 cup coconut sugar
2 tsp vanilla
1 cup spelt flour
3/4 tsp baking soda
2/3 cup sugar free chocolate chips
Method
- Preheat your oven to 350 degrees.
- In a large mixing bowl, beat together the almond butter and melted cocongut oil with a whisk.
- Add in the egg, maple syrup, Coconut sugar, and vanilla. Mix until combined.
- Add in the flour and baking soda and mix until combined. Then fold in the chocolate chips.
- Press the cookie dough into an 8” or 9” cast iron skillet. Press extra chocolate chips on top if desired.
- Bake for 18-22 minutes until it is barely golden brown. Don’t overbake, it will continue to cook slightly as it cools.
