
Almond Butter Coconut Cookies
These simple delicious healthy cookies are packed with coconut and chocolate chips and always a hit.

Ingredients
2 eggs
1 cup organic almond butter
1/4 cup honey
1 cup shredded coconut
1 teaspoon baking soda
1/2 cup chopped nuts, optional, (I like to use pecans)
1/2 cup chocolate chips
Method
Preheat oven to 375.
In a large bowl, combine eggs, nut butter, and honey until smooth.
Stir in remaining ingredients.
Place about 2 tablespoonfuls of dough onto an ungreased cookie sheet (you can use parchment if you want).
Bake for 10 minutes.
Remove from oven and let rest for 5 minutes before removing from cookie sheet.
Makes about 2 dozen cookies, depending on how big you make them.
