Peanut Butter Chocolate Chip Protein Bars

Ingredients

  • 2 cups oats

  • 4 scoops vanilla whey protein powder (1 cup)

  • 1/2 tsp salt

  • 1/2 cup natural peanut butter

  • 1/4 cup honey

  • 1 tsp vanilla extract

  • 1/2 cup unsweetened almond milk or water

  • 2 tbsp mini dark chocolate chips

Method

  • Add the oats to a blender and blend until you get a fine oat flour.
  • Add the oat flour, protein powder, and salt to a bowl and mix.
  • Add the peanut butter, honey, and vanilla extract and stir.
  • Slowly add the almond milk or water until a thick dough forms. Use your hands if needed. You may not need all of the liquid.
  • Line a container with parchment paper and press the dough firmly into the container.
  • Sprinkle the chocolate chips over the top and gently press them into the dough.
  • Refrigerate for at least 20 minutes to set.
  • Slice into bars and enjoy.
