Ingredients
1 lb Large shrimp, raw and deveined. Ensure shrimp are fresh or thawed if frozen.
1 bunch Asparagus. Choose firm, bright green stalks.
2 tbsp Olive oil for sautéing
1 lemon Lemon juice, Freshly squeezed
to taste salt and pepper
1 tbsp Paprika
1 tsp Cayenne pepper. Adjust for spice preference.
1 tsp Onion powder
1 tsp Garlic powder
1 tsp Thyme
1 tsp Oregano
Method
- Prep the shrimp by rinsing and drying them. Trim asparagus and cut into 2-inch pieces.
- Mix blackening seasoning ingredients in a small bowl.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add shrimp in a single layer and cook for 2-3 minutes until golden. Flip and season, t
- hen cook for another 2-3 minutes.
- Remove shrimp and sauté asparagus for 3-4 minutes until tender and bright green.
- Return shrimp to skillet, drizzle with lemon juice, and toss to combine. Heat through for 1 minute.
- Adjust seasoning with salt and pepper. Serve hot with lemon wedges.
NOTES
This dish can be served over rice, quinoa, or in a salad. Great for meal prep!
