Ingredients
3 medium russet potatoes diced small
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
½ tsp cumin
Salt & pepper to taste
For the Taco Beef : 1 lb 93% lean ground beef
1 small onion diced
2 cloves garlic minced
2 tbsp taco seasoning
½ cup salsa or tomato sauce
¼ cup water
Toppings of choice: cheese, black beans, lettuce, guac, sour cream, avocado, tomatoes, cilantro, lime, corn
Method
Prepare the Potatoes:
- Preheat oven to 425°F (220°C).
- Toss diced potatoes with olive oil and seasonings.
- Spread on a baking sheet and roast for 20–25 minutes, flipping halfway.
Cook the Taco Beef:
- Heat a skillet over medium-high heat.
- Brown the ground beef with diced onion.
- Add minced garlic and cook 1 minute more.
- Stir in taco seasoning, salsa, and water.
- Simmer for 3–5 minutes until thickened.
Assemble the Bowls:
- Add a generous layer of roasted potatoes.
- Spoon taco beef over the potatoes.
- Top with cheese, lettuce, tomatoes, corn, beans, avocado, and sour cream.
- Finish with cilantro and lime juice.
